Apparently pig lard is rich in 18 of the 23 amino acids that our bodies need. Of those 18, about 7 are the 9 essential amino acids that our bodies cannot readily produce. And while I do understand the philosophical point of this post, I will add that meat, of any kind, has all 23 amino acid groups that keep us functioning. So while the porcine product is portly, it is also essential to your existence. Just keep three things in mind:
1, always cook it properly—no oinking when you slice it
2, always eat at least 6 ounces
3, run a bit afterwards because the fat in the pig fat is composed of about 36g of saturated fat. Saturated is the not-so-good stuff that makes love handles and heart attacks. So get some cardio in!
As far as the rest goes, I suspect that you will get used to it after some time. One of the reasons you told me you wanted to go into the PC was to distance yourself from American culture. This is just one of those ways to put an extra few miles between you and American culture. As the prophet Gloria Gaynor once said “I will survive.” And so too will you!
